The Best Bacon Spinach Artichoke Dip

Did you know that this Sunday is National Artichoke Day?

Artichokes are one of the oldest foods known to man, and are actually in the sunflower family. In Greek mythology, Zeus turned his mistress into the first artichoke plant after he caught her trying to sneak out of Olympia.

Possibly the strangest punishment theory, ever.

A few weeks ago, I found a pre-made tub of bacon spinach and artichoke dip at the grocery store. Hot spinach and artichoke dip is possibly one of my all time favorite appetizers . . . and seriously, when DOESN’T bacon make everything better? I happily tossed the packaged dip into my cart and headed for the chip aisle, with plans of indulging the sudden craving.

Unfortunately, it was probably the grossest thing I’ve eaten in a long time. Processed and artificial flavors . . . yuck yuck yuck. It was a total bummer and made my hankering for GOOD spinach and artichoke dip even stronger.

So I scoured the web for recipes and came up with a combination that I think is possibly the best bacon spinach artichoke dip I’ve ever had. This recipe is warm, creamy, and full of rich flavors, making it an easy crowd-pleaser. It’s also got a thicker consistency than the normal artichoke dip, which I prefer.

Plus, it’s got a ton of bacon in it. Bacon makes every recipe an instant food win.

The Best Bacon Spinach Artichoke Dip

Ingredients
  • 1lb bacon
  • 16oz cream cheese, room temperature
  • 1 cup mayo
  • ¼ cup grated Parmesan cheese
  • 1 (10oz) box frozen chopped spinach, thawed and drained well
  • 1 (14oz) can artichoke hearts, drained and chopped
  • ½ cup mozzarella cheese
Instructions
  1. Preheat oven to 375 degrees
  2. Cook bacon and drain well.
  3. Beat cream cheese until smooth. Add mayo, crumbled bacon, Parmesan, spinach, and artichokes and mix until well combined.
  4. Spoon mixture into a casserole dish, top with mozzarella cheese. Bake for 25-30 minutes until cheese is bubbly and golden brown. Serve immediately.
