Creamy Cucumber and Tomato Salad Recipe

When my Aunt brought her granddaughter to visit, she also came with gifts from her garden: an enormous bag of home grown cucumbers. As much as I love the cool, crisp veggie on these sweltering summer days, one can only eat so many as salad toppings. So, instead of letting them go to waste, I thought I’d try making a cucumber salad.  Mine is a loose interpretation of Ina Garten’s, which immediately stood out to me since there’s no sugar in the recipe. However, I realized there was no way I was following Ms. Garten’s exact directions, because I don’t have the patience to wait 4 hours for cucumbers to de-juice in my fridge. No thank you.

Summer picnics can get a little tricky sometimes for diabetics. It doesn’t take much to overload on all the tasty pasta, potato, and macaroni salads, plus all the other carb-loaded food options. I’m planning on bringing this side dish to the next party, because it’s simple, fast, delicious and I know I can eat the crap out of it without going into a diabetic coma.

Creamy Cucumber and Tomato Salad

Ingredients
  • 3 large cucumbers, sliced thin
  • 5 medium tomatoes, deseeded and diced
  • 1 onion, sliced thin or diced
  • 2 cups light mayo
  • 2 cups sour cream
  • 2 tbsp spicy brown mustard
  • 2 tsp dried Dill
  • 1 tsp (each) salt & pepper
  • Splash of Vinegar (approx 1-2 tsp)
Instructions
  1. Spread cucumber slices on paper towels to absorb excess water. This helps to keep the salad from getting too runny in the fridge. If you have more time, sprinkle cucumber slices with salt and set in a colander for an hour to drain before patting dry.
  2. In a large bowl, combine mayo, sour cream and spicy mustard. Toss with cucumbers, onions, and tomatoes.
  3. Add Vinegar and seasonings to taste, making sure to evenly coat the veggies.
  4. Cover dish in plastic wrap and chill before serving. Enjoy!

    Oh my heavens! That looks so delicious!! I am going to borrow this recipe and make it. I love cucumber salad with sour cream and vinegar. I don’t know what it’s called though. My mother in law makes it and I LOVE it!
