Balsamic and Chive Cucumber Salad
  • 1 large cucumber
  • 3 tbs Balsamic Vinaigrette
  • 1 tbs Yellow or Dijon Mustard
  • ½ tbs fresh chives, chopped
  • Salt and Pepper to taste
  1. Peel cucumber and remove seeds. Cut into ½ inch chunks and place in a colander over a large bowl. Sprinkle with salt and allow the cucumbers to drain in the fridge up to 3 hours.
  2. Combine all other ingredients. Shake or Whisk until well combined.
  3. Pour dressing over cucumbers and mix well. Serve cold, garnished with additional chives.
